RESH PEACH CUSTARD PIE1 - 9" unbaked pie shell
4 eggs, beaten
1 cup sugar
6-8 Fresh Shenot Peaches
Fill the pie shell with sliced peaches. Beat eggs with fork. Stir in sugar. Pour the mixture over the peaches. Bake at 425 degrees for 15 minutes then reduce the temperature to 350 degrees for 30 minutes or until the pie is set.
Corn Preparation Tips from the Penn State College of Agriculture Boil: Place corn in a large kettle of UNSALTED boiling water. Cover and cook 4-7 minutes. (Salt may toughen kernels.)
Steam: Put 1 inch of water in a kettle with a steam rack. Bring water to a boil. Place corn on the rack and steam covered 8-10 minutes.
Microwave: Place 4 husked ears in a dish with 2-3 Tablespoons of water. Cover with plastic wrap. Cook 6-8 minutes on high. Let stand 5 minutes to finish cooling.
Grill: Remove silk from ear and pull husk back over corn. Soak in cold water 10 minutes. Grill 4 inches from heat. Cook 15-20 minutes turning occasionally.
Roast in Foil: Remove husk and silk. Brush with melted margarine or butter. Wrap in foil and roast on grill 15-20 minutes.
Hot Bacon Dressing
for Shenot Spinach or Leaf Lettuce
6 bacon strips ½ cup vinegar
8 cups torn spinach or leaf lettuce ½ tsp. seasoned salt
2 hard cooked eggs, chopped (optional) ½ tsp. garlic powder
2 green onions sliced ¼ tsp. ground mustard
½ cup sugar
Cook bacon in skillet until crisp. Remove bacon, crumble and set aside. Reserve ¼ cup bacon drippings. Place the greens, eggs, onions, and bacon into a large serving bowl. Add the remaining ingredients to the bacon drippings, bring to boil. Drizzle over the salad and toss. Serve immediately. Yield 8 servings.
FRESH PUMPKIN BREADSift together:
2 tsp. nutmeg
1 tsp. pumpkin spice
3 cups sugar
3 1/2 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
ADD: 1cup oil
4 eggs
2/3 cups water
2 cups of prepared pumpkin
1 cup nuts or raisins, optional
Mix together until smooth, bake in 2 standard size bread pans, greased and floured, at 350 degrees for one hour.
To prepare fresh pumpkin for recipes:
Remove the stem and wash a Shenot Pie Pumpkin. Cut pumpkin in half and remove the seeds. Place cut side down in a glass microwave dish with a little water to cover the bottom of the dish. Microwave on high approx. 15 minutes until soft, rotating the dish occassionally. Cool. Scoop out the pulp and process in a food processor until smooth. The same insrtuctions apply to oven baking. Bake at 350 degrees until soft.
