Grilled Chicken & Peach PizzaMy family and I love pizza. My daughter, Pepper, used to call it "patsy" so that is what we refer to it in our house even though she has grown out of it. Over the past few years we have been making our own pizzas on a weekly basis. We like to get together with family and friends and everyone brings their favorite toppings (mainly leftovers from the week's dinners). This pizza came about after an afternoon of making peach jam. I had a pizza crust and some peaches left over. This is what was born out of some simple ingredients I had on hand. It is so easy and full of flavor. It can be a meal or appetizer as it is so adaptable and versatile. It has definitely made it in our weekly rotation during peach season. I hope you love it too!

1 pizza dough/crust ( I use frozen )
olive oil garlic powder black pepper Italian seasoning ( I use Primal Palate's Amore) 1 grilled chicken breast seasoned with salt and pepper ( I use chicken thighs, grilled) fresh mozzarella, goat cheese or feta ( I used all three) 2 medium ripe peaches 1 small red onion, slivered a good balsamic vinegar. I use Enchanted Olive Traditional Balsamic Vinegar. |
*Preheat your oven to 375 degrees.
*Form the dough on a pizza pan or cookie sheet. Be sure to spray it with some non stick cooking spray of your choice to prevent sticking. Drizzle it with olive oil and dust it with garlic powder, Italian seasoning, salt and pepper. Bake in oven for 15 minutes or until done to your liking. For crisper crust you'll maybe want to bake it a few minutes longer. *Let crust cool for about 5 minutes before you add toppings. *Next, add your grilled chicken, peaches, and red onion. *In a separate bowl I mix my cheese and balsamic vinegar together before I add it to the pizza. *Bake until cheese is melted and slightly bubbly. *Serve hot or cold. |
